Frequently Asked Questions

1. Why should I choose Custom Confections for my event?  We make all of our cakes from scratch, we never use box mixes, and we only use fresh ingredients. We don’t make you pick your design from a catalogue. We want to make sure that your cake is one of a kind. Your cake is NEVER frozen. We bake and decorate your cake the day before and day of your event. We usually book only two events a week, so that your order gets our undivided attention.

2. How far in advance do I need to book my wedding cake?  We suggest booking wedding cakes 9-18 months in advance so that we can make sure the date is open for you. It is best if you have already decided on your theme, colors, flowers, and venue before you have a consultation.  (We will take orders with less notice as long as the date is available.)

3. Do I need to pay for my wedding cake ahead of time?  At the time of contract signing 50% of your total cake price is due. 30 days before your wedding, you will give us a final guest count. This is when the other 50% of your payment is due.

4. How do I reserve my event date with you?  At the time of booking, you will receive a contract. Once you have signed the contract and given us a 50% deposit, your date is reserved.

5. How much are cake tastings/consultations, and what do they entail?  If you have already signed your contract and given us your 50% non-refundable deposit, your tasting is free. If you haven’t signed a contract, tastings are $25 that would go towards your order should you decide to place one. You can choose four flavors to sample, and you will get three samples of each flavor. Tastings are usually done at the clients’ house since we don’t have a store front location. We can also meet at a different location if you prefer. Here you can provide us with pictures and color swatches, and discuss design, or this can be done at another time over email or phone. There is no time limit for your consultation so you don’t need to feel rushed to give us all of your details within an allotted time. If you should need to reschedule, or cancel, we ask that you contact us no later than 1 week in advance.

6. What if I'm too busy for a consultation?  If you can't set up an appointment, your cake order can be done completely by e-mail or phone. Feel free to send any pictures you have for ideas.

7. What methods of payment do you accept?  We accept cash, or Credit Cards (Visa, MasterCard, American Express, Discover).

8. What is your refund/cancellation policy?  A deposit of 50% is due at time of order placement. If a cancellation is made less than four weeks prior, the balance is due in full. Changes to delivery/setup must be confirmed no later than four weeks prior to the event.  In the event of cancellation:

     1. All requests for cancellation must be made in writing.

     2. If a cancellation is received, the aforementioned deposit will not refundable.

     3. If a cancellation is received less than four weeks prior to the promised delivery date, the     aforementioned deposit and balance are due in full.

     4. If you cancel a cake, your non-refundable deposit can be used towards another order.

9. How do I pick a design? Some brides have a clear vision of what they want their cake to look like. If that is your case, bring us pictures or drawings of what you’re dreaming of. Others don’t have a clue where to begin in designing a cake. In this case we’ll help you choose a design. Here are our suggestions: bring us color swatches so we can be sure to get the perfect shade, give us pictures of your decorations for the day, search the internet and give us pictures of what you like, think of adjectives to describe your day. Will it be elegant and sophisticated, or dramatic and whimsical? Give us pictures of dresses, or flowers, or anything that you might draw inspiration from. The possibilities are endless when it comes to choosing the perfect design.

10. Do I have to pick a design from your pictures? Absolutely not! We suggest you look at our pictures along with other internet searches to find elements that you desire to have on your cake. Our job is to provide you with a unique masterpiece that isn’t copied head to toe from previous cakes.

11. Can I supply my own cake design ideas? Yes, absolutely! It’s important that we work together to incorporate your style and tastes into your order. We work individually with each client to ensure your cake, and/or cupcakes are tailored for your event.

12. Can you use my wedding cake topper? Can you put my topper on for me? Yes, we can use your topper. We strongly suggest bringing your topper to us when you place your order so we can decide if it needs any special setup or preparation to work with your cake.

13. Who supplies the ribbon that I want on my cake?  The bride is responsible for purchasing all non-edible items she wants to decorate her cake. Once we know the size and shape of your cakes, I will let you know the amount of ribbon to purchase. (It is best to avoid wired ribbon, sheer ribbon, and paper like ribbon.) We would need to have these items 30 days prior to your event when the final payment is due.

14. How are your cupcakes decorated? Your cupcakes can be decorated with only buttercream, or buttercream and a fondant topper with decorations that can be peeled off easily to eat.

15. Can you provide cupcakes for a wedding reception? Yes! We can provide a cake, cupcakes, or a mixture of both for your events.

16. Does my cake have to be all one flavor? Absolutely not! We recommend giving your guests a choice. For cakes, you can choose a different flavor for each tier with no extra cost. For cupcakes, you can choose multiple different flavors that we identify with different colors or design so they can be distinguished easily.

17. I have my own cake flavor in mind, do you do custom cake flavors?  Our cakes are made to order, so if you have a flavor in mind, let us know and we’ll do everything we can to make it for you! In this case, we would need at least 6 months to try out different recipes. Check out our menu to see if we make what you had in mind.

18. I like the look of Fondant, but I don’t like the taste.  A lot of designs require cakes to be covered in fondant and it gives your cake a cleaner look. We usually decide when a cake needs to be covered in fondant if you don’t specifically request not having it. Also, the majority of our decorations are made with fondant or gum paste which is very similar. These can be easily removed before eating. All of our fondant covered cakes have a layer of frosting underneath it; so you do not have to choose over buttercream or fondant, you get both when your cake has fondant! You just cut the pieces and let each guest decide if they want to eat it or not. Most people do not like the taste of fondant, so in that case, it peals off very easily, and has buttercream underneath.

19. When will my cake/cupcakes be baked? Your order will be baked the day before your event, and never frozen. Some gum paste or fondant decorations need to be made ahead of time in order to dry.

20. What is “from-scratch baking”? Scratch baking means we use separate ingredients: eggs, cream, butter, flour, and sugar. We break the eggs and measure the flour. No mixes are used in making your cake.

21. Does Custom Confections deliver? We deliver all of our cakes and cupcakes with no extra charge. Delivery includes full setup of the cake, cake/cupcake stand, and any toppers or fresh flower decorations.

22. Do you make display cakes?  We can make display cakes perfect for bridal events, outdoor weddings or magazine shoots. Many brides desire a grand look but don’t need the amount of servings for a larger cake. In this case, we can make a larger cake with some tiers that are “dummies” or fake. For example, you may only need a three tier cake, but want something bigger for looks, so we can make an extra two dummy tiers to give a grander look. Please contact us to learn more.

23. Can you provide wedding cake stands if required?  Yes, we have multiple cake stands to choose from that will fit your theme that you can rent for free. We usually make arrangements with the venue to get it back so you don’t have to worry about returning it. If you want to use your own cake stand, make sure you let us know its dimensions, and send us a picture of it no later than 1 month after the contract signing.

24. Can I use fresh flowers on my cake? Yes, ask your florists to bring extra flowers for your cake if you want fresh flowers. Make sure they are not toxic or treated with pesticides. They must be present at the time of delivery so that we can wrap them properly and place them on the cake.

25. What size cake do I need?  Depending on the number of guests you’ll be having and how your cake is being served will determine the final size of your cake. We suggest ordering at least an extra 20 servings than what you expect. This will ensure that you don’t run out of cake if you happen to have an overflow of guests. We will be able to tell you what size cake you need when you give us a guest count. If you want a larger looking cake, you can also add fake “dummy” tiers for an extra cost.

26. Should I save the top tier for my first anniversary? We do not recommend freezing your wedding cake because our cakes do not contain any preservatives.  Instead, let us bake you a fresh one for your anniversaries!

27. My reception is outside, will my cake melt?  Cakes usually do not withstand the heat in Florida unless it is in the winter months. If you have an outside reception, we suggest ordering a dummy cake that looks just like a real one. It is made of Styrofoam so it won’t have the problems a real cake would have. In this case, you would receive the dummy cake and sheet cakes, which will be cut and served when the dummy is taken down, so your guests will never know that it is fake.
